Here we are in the middle of March and the flu is still going strong. This flu season has been dreadful whether you have had a flu shot or not. The one thing I have been able to count on is making sure I keep my immune system boosted. I have my daily orange juice full of vitamin C and when I need that extra immune booster I have my elderberry gummy bears. I have been blessed to make them and give them out to family and friends and have received praise over how well the gummy bears have worked for everyone. You can take it daily or if you feel something coming on you can take them to knock it out quickly. So here once again is the recipe for those who are interested in making their own. It is very easy and takes very little time considering all of the benefits you will gain. I personally prefer them with honey but for those who are diabetic or under one year you will need to leave the honey out.
2/3 c. Elderberry Powder
2 T. Echinacea Root
2 T. Fresh Ginger Root
1 Cinnamon stick
½ t. Whole Cloves (optional)
3 1/2 c. Water
¾ c. Raw Honey (optional) Do not use for children under 1 year.
Place all ingredients except the honey into a saucepan and simmer 30-45 minutes. Strain well, I strain at least twice. Allow mixture to cool until warm to the touch. Add honey to your taste if using. Stir well and refrigerate.
NOTE: In the elderberry syrup recipe don’t worry if you don’t have the Echinacea root, the elderberries will be strong enough to give you that boost. Not everyone can tolerate cloves so you can leave that out as well.
Elderberry Gummies (makes 50)
1 ¼ c. Tart Cherry juice (or your choice of juice)
4 T. unflavored Gelatin
¼ c. Elderberry syrup
2 T. Raw Honey (optional)Do not use for children under a year.
Heat ½ c. juice til simmering. Combine gelatin and juice. Stir quickly to dissolve gelatin. Combine all ingredients and whisk until well blended.
Pour into molds and refrigerate for at least an hour.
